Ayurveda doesn’t reject salads — it rejects timing.

Raw vegetables are considered “guru” in some ways and cold, dry, and rough (Sheeta, Ruksha, Khara guna) in their qualities. To digest them well, you need strong Agni (digestive fire). And Agni doesn’t stay constant through the day — it rises with the sun and falls with it.

The logic, simply:

  • Agni peaks around midday (12–2 PM), when Pitta dosha is dominant. This is the best window for heavier or raw foods.
  • After sunset, Kapha begins to rise and Agni naturally weakens. The body shifts toward rest and repair, not digestion.
  • Raw, cold, fibrous food demands more digestive effort — exactly when your Agni has the least to give.

What gets aggravated:

  • Vata — raw, dry, rough foods increase Vata qualities, especially problematic in the evening when Vata also rises again (2–6 AM and dusk are Vata times too)
  • Kapha — undigested food (Ama) accumulates, and Kapha’s coldness compounds with the raw food’s coldness
  • The result is often Ama (toxic undigested residue) — considered the root of most chronic disease in Ayurveda
  • Downstream effects Ayurveda links to habitual evening raw food:
  • Bloating, gas, and sluggish digestion that becomes chronic over years
  • Poor sleep quality (heavy digestive load competing with the body’s repair cycle)
  • Weakened Agni over time, making the person more prone to Ama buildup
  • Joint stiffness and Vata-type disorders, as chronic Ama is believed to lodge in joints (linked in classical texts to Sandhivata / arthritic conditions)
  • Skin dullness and breakouts, tied to poor elimination of toxins
  • Long-term metabolic sluggishness — the classical root of what we’d now call weight gain and low immunity

The practical takeaway for followers:

Enjoy your salad — just make it a lunch companion, not a dinner one. After 5 PM, favor cooked, warm, lightly spiced foods (moong dal, soups, sautéed vegetables) that ask less of a tiring Agni and support deeper, more restful sleep.
